When you complete this course, you will be ready for a career in hospitality management. You will have the skills and knowledge to lead a team as a functions manager, restaurant manager or front office manager.

This course is part of the Lower fees, local skills initiative. From 1 January 2020 through to 31 December 2025 you'll only pay half the course fees, capped at $1,200; or $400 if you're aged 15—24 or eligible for a concession, plus resource fees and other fees that may apply to your course.

Guided by our team on industry expert lecturers you will learn to lead hospitality services. People are the main focus of Hospitality and through this course you will gain management skills to help inspire your team, make decisions and provlme solve. You will also gain strong hospitality technical skills and be trained in a diverse range of areas from reservations to rostering staff and planning events. This pathway can take you around the world, whether it's working on a cruise ship, hotel or working behind bars, in night clubs or cafes.
- Are you currently working as a Supervisor in the Food and Beverage sector and seeking a promotion to work as a manager, or have ambitions for this job title/position in the future or
- Want to own and run your own food and beverage business or are
- A recent graduate of SIT30622 Certificate III or SIT40422 Certificate IV in Hospitality.

- Have flexibility to adapt to changing circumstances and trends in the restaurant industry.
- Have knowledge of marketing strategies to attract and retain customers.
- Have genuine interest in food, service, and creating a welcoming atmosphere.
- Demonstrate compliance with local, state, and federal food safety laws and other relevant legislation.
- Follow workplace policies and procedures. Complete workplace documentation.
- Be able to identify and assess potential hazards and risks in the work environment.
- Be comfortable serving all types of foods, including meat, seafood, eggs, and nuts. If you have restrictions due to medical reasons, please discuss with South Regional TAFE lecturers to explore options.
- Have good time-management and learn to thrive under pressure.
- Be available to work weekends, public holidays, and different shifts. Strong work ethic.
- Show tolerance, patience and the willingness to work with and serve people from diverse backgrounds and cultures.
Time Commitment – You will need to allocate appropriate time to complete this course. This includes attending classes on-site, undertake independent study outside of class hours, and completing the mandatory minimum service shifts / work placement. Please refer to the timetable on the webpage and/or discuss with your lecturer.
You will need to:
- Complete all required service shifts at our live-works restaurant. Bunbury Campus live-works is at the Epicure Training Restaurant.
- Attend service shifts as required for successful completion of course. Absenteeism will affect progress in this course.
- Organise your own travel to and from these service shifts. Some of these service shifts will be outside South Regional TAFE standard student hours.
- Understand your work site’s Work Health and Safety (WHS) obligations and safety requirements under the Work Health and Safety Act 2020 and Codes of Practice. You will be required to comply with these WHS obligations while undertaking supervised service shifts. Any concern about WHS please direct queries to the supervisor of the service shifts.
The South Regional TAFE Epicure Training Restaurant provides the opportunity for you to learn in real-life settings in these award-winning facilities. You will gain hands-on experience preparing and serving food for real customers from the public.

If you spot a problem, we encourage you to ask questions, clarify as needed, and find a solution! Build confidence to make decisions and lead a team.
- Initiative - Stay motivated, take proactive steps, and seek help when necessary.
- Planning - Manage time well. Knowing how to prioritise tasks both before and during service and complete your tasks efficiently are crucial for your success.
- Leadership and Business Skills – Manage service delivery including responsible service of alcohol. Manage workplace conflict. Apply financial management. Workplace health and safety. Lead a diverse team. Ensure regulatory compliance. Generate rosters. Provide quality customer service.
- Self-Management - Reflect on your performance. Reflection is a powerful tool for growth and success as a student at South Regional TAFE, for honing your skills and as an industry professional. Being a professional in the workplace can mean learning when to accept responsibility for your failures as often as your successes. This is how we learn!
